Method: A continued exploration of intracellular fermentation possibilities: whole clusters are sealed in a stainless steel tank for 11 days of carbonic maceration, after which they are basket pressed allowed to finsih fermenting spotaneously. 15 months in neutral French oak. Minimal SO2. No fining or filtration.

Our favorite crushable summer white. There’s nothing that we love drinking more on a hot day than something mouth-watering with a touch of waxy texture and fruit that shows juicy and bright. Amazing to know what is possible harvesting early on our warm site.
Tasting Note: Highly enjoyable, the wine is juicy and lively with very pretty texture and a lovely spectrum of aromas and flavors. Fleshy stone fruit and lychee on the palate with an herbal lift. Fresh citrus to finish keeps you running back for more. Perfect thing to drink under the sun.
