Method: Sauvignon Blanc carried through a native fermentation in stainless steel, 17 days on skins. Aligoté, Malbec and Merlot fractions direct-pressed. 5 months in stainless steel barrels, minimal racking, minimal SO2 added. No fining or filtration.
